Grain-Free Protein Cinnabon Pancakes



We kind of threw these together this morning because we were almost out of eggs! They turned out AMAZING!!! My awesome cousin suggested adding cottage cheese and I'm convinced that's why they were so fluffy! My kids LOVED them and they were super easy! 


Recipe:
1 cup almond flour
1 egg
2/3 cup liquid egg whites
1/2 cup cottage cheese
1 tsp baking powder
2 tsp cinnamon 
1/4 cup coconut milk
1 tbs honey (or stevia)

Throw it all in the blender and BLEND! 
Then just cook them on the stove like regular pancakes. 

We also made a "syrup":
1 tbs butter (melted)
2 tsp coconut oil
1 tsp cinnamon
1 tbs honey
